This summer David and I spent two weeks in Alaska having the time of our lives (more to come on that in a later blog post). One of the best things we did on our trip was go Halibut fishing in the Halibut fishing capital of the world, Homer, Alaska. It was such a blast! We took a 2.5 hour boat ride into what felt like the heart of the Pacific Ocean, cast our lines and almost immediately started to get bites! We couldn't believe it! It was the most exciting fishing I'd ever done (...sorry Dave Pearo)! Unfortunately Halibut fish don't have the best table manners- many times we worked hard to reel in our 200ft of line only to discover that our 'catch' had dined and dashed! RUDE. However with a little patience and lots of hard work David and I managed to catch two fair sized Halibut fish each.
After having our four fish skinned, de-boned and filleted we ended up with 17lbs of Halibut! When we got home we couldn't wait to enjoy our first meal and what better way to enjoy fresh fish than in the form of a TACO?! Ammi right?!
Seriously guys these tacos are SO delicious that you won't want to confine taco night to just Tuesday's anymore! I guarantee these bad boys will be making their way into your Friday, Saturday, Monday, Wednesday, Thursday, Sunday (...you get the idea) dinner plans well into September! You can thank me later ;)
