Do the words HIGH PROTEIN, LOW-FAT and NATURALLY LACTOSE-FRIENDLY peak your interest? Skyr (pronounced Skeer), a type of yogurt that has been enjoyed by the people of Iceland for the last 1000 years, is all that AND more! When I first heard about Skyr yogurt I must admit that I was skeptical- more protein and less sugar than plain greek yogurt and naturally lactose-friendly seemed too good to be true. But after giving Skyr a try and not having intense stomach pain I'm a total believer!
I enjoyed my Skyr yogurt as a parfait, layered with fresh raspberries, pecans, cinnamon and a scoop of Nutella! MMmmmmm! So delicious! Skyr would also be delicious in smoothies, on top of oatmeal or just topped with fruit!
