WOW. When Friday came I was SO SO SO ready for the weekend! David and I went to Ikea after work on Friday to pick up a desk and end table. When we got home at 7:30ish I lay down on the couch and fell asleep....I woke up at 9ish only to move to my bed, where I slept deeply until 7:30am the next morning! HA- pathetic, I know! Anyways....I'm feeling rested and ready to tackle week 2!

I love starting the day with TOAST, David loves smoothies.
We may not share the same taste in breakfast foods..... but we BOTH agree that FUELING up on GOOD FOOD at the start of the day is REALLY important (trust me....you do NOT want to see David when he's hungry! ha).
Recently I've become a little bored with toast, so I wanted to try adding something NEW to my breakfast repertoire. This recipe for Refrigerator Oatmeal- filled with seeds, fruit, protein and healthy fat- promises to deliver all the energy I'll need to make it through my busy teaching day without becoming HANGRY (definition: a state of anger caused by lack of food).
I combined a couple recipes I found online to create this BPBP (banana peanut butter pecan) Refrigerator Oatmeal. Hope you enjoy!!
What you'll need:
How to make it:
1. Combine all ingredients (bananas last) into a small jar or plastic container
2. Cover and place in the fridge OVERNIGHT
3. Enjoy your hearty, and healthy, breakfast the next morning!!
