Guys! I love Fall for SO many reasons (hello Thanksgiving, apple picking, sweater weather, crunchy leaves, ALL of the pie, cute baby clothes etc.) but at the top of that list is Soupfest! Soupfest is an annual event that takes place in Holland Landing that consists of about 25 soup makers gathering under a big white tent to serve all different types of soup to about 2000 event attendees! It's just the best! David and I have participated in Soupfest on behalf of Bijoy's restaurant for the last 4 years and it's become a fave Fall tradition!
This year I thought it would be cool if my church (Richmond Hill Community Church) made and served a soup at Soupfest. Honestly...I had NO IDEA how much work it would be to make 40 litres of soup in a non-industrial kitchen with household pots, food processors etc. Let's just say it was a LOT! Next year we'll be starting the preparation at least two days in advance and gathering a bigger team to help! HA.
In the end all of our hard work definitely payed off! Not only did we get to connect with hundreds of people from our community, but we also ended up winning the award for BEST homemade soup! Woohoo!
So what was our award winning soup? PUMPKIN, CURRY, COCONUT SOUP! And YES- it tasted as good as it sounds! Check out the recipe below and if you end up making the soup...be sure to let me know!
